White Tea: White Peony (2026)

Our 2026 White Peony (Bai Mudan) comes from the mist-covered mountains of Fujian, China — one of the few places in the world where white tea has been crafted the same way for centuries. Harvested in early spring when the air is still cool and the buds are just waking, each leaf is gently sun-dried and air-cured. Nothing roasted. Nothing rushed.

In the cup, it opens slowly: a pale golden liquor, clear as morning light, with a natural sweetness that lingers without asking for attention. Notes of fresh hay, white flowers, and a quiet honey finish. The kind of tea you come back to not because it demands it — but because you want to.

White Peony is one of the most approachable white teas, equally loved by those new to loose leaf and those who have been drinking it for years. It is mild enough for every day, and complex enough to keep surprising you.

Brew it at 80°C, steep for 2–3 minutes, and let it go 3 to 5 rounds — each infusion a little different, each one worth sitting with.
